It's hard to dispute the popularity of cheese, and cheese fondue is no exception. In fact, April 11 is National Cheese Fondue Day. The earliest known recipe for the melted delicacy dates back to 1699. For over four decades, the fondue-famed restaurant The Melting Pot has been serving it up, with guests consuming 717,560 pounds of cheese fondue annually. Now that is a lot of cheese.
(No wonder Justin Bieber added a little hint of fondue in his 2012 hit "Boyfriend"–"Chillin' by the fire while we eating fondue." Okay, he didn't specify fondue type, but my vote is for the cheese variety.)

Original World Champ Cheese Fondue

Ingredients
- 4 oz Pinot Grigio
- ½ tsp shallots, chopped
- ¼ tsp Dijon Mustard
- 6 oz Roth® Grand Cru® Surchoix cheese
- 2.5 oz cornstarch
- ½ tsp scallion, sliced
Directions
Shred cheese and prepare the shredded cheese by dusting with cornstarch
Add Pinot Grigio to fondue pot
Add shallots and Dijon mustard and stir with small whisk or fork
Allow Pinot Grigio to thoroughly warm up before adding cheese
Add ⅓ of the cheese and mix thoroughly using small whisk or fork
Add the next ⅓ of the cheese and mix thoroughly using small whisk or fork
Add the remaining ⅓ of cheese and mix thoroughly until all the cheese is melted and incorporated
Use a whipping motion to fluff up the cheese
Sprinkle scallions over the top of finished cheese
Enjoy!
